The history and the processing of the eel are for the lagoon city one of the characterizing elements, for this reason with the recovery of the grandiose complex of the marinated factory, set in the historical center of
Comacchio, the fish factory was born, or better reborn.
Eels, fished in the brackish valleys that surround the city, have been worked and preserved according to a marinating process that has remained unchanged over time. In the past this activity was carried out by a myriad of families who, on behalf of the Valli company, provided for marinating. In the early decades of the 1900s, processing was also part of the Company's prerogatives, together with fish cultivation, supervision, internal administration and marketing of fish.
An activity that lasted consecutively for over sixty years, involving a large number of workers during the period in which the work was carried out.
Today the Manifattura dei Marinati is articulated over more than one thousand six hundred meters: it presents the Sala dei Fuochi, the heart of the entire complex, in which twelve fireplaces are interspersed with niches, in which it took place, and the processing of "Anguilla" still takes place today. marinated from the Comacchio Valleys ”;
the Calata or Fossa, where the boats full of eel and marinated fish landed.
In its original state, the Sala degli aceti is also preserved: with vats and barrels.
The Manufacture is now home to the Anguilla Museum, a museum not to be missed if you want to understand the deep bond between the Comacchiesi and the products of their waters.
It is an experience that lets you perceive the gestures of the daily life of the past, spent next to the fires and among the voices of the women who choose the right brine, dosing vinegar, water, salt and bay leaves.
